Double Chocolate Cookies (With A Healthy Twist)
I never used to be a big chocolate person. And then I lived in Switzerland for a year and that all changed (cue: chocolate addiction). Y'all know by now that I love finding easy ways to put a healthy twist on treats, so here you go: my double chocolate cookie recipe. They are chewy and moist and delicious. The secret ingredient? Avocado! Believe me, it works. Give 'em a try and let me know what you think!
1 ripe avocado
1/2 coconut sugar or granulated monk fruit
1 egg (or flax egg for vegan version)
1/2 cup almond flour
1/2 tsp baking powder
1/2 cup cocoa powder (*not cacao this time)
1/2 tsp vanilla extract
1/2 cup Hu kitchen gems (or other vegan choc chips)
Sea salt (optional)
Preheat oven to 350 degrees. You can also make these in the air fryer at 350! I've done them both ways and they're different, but great.
Mash avocado in a medium mixing bowl. Combine with egg/flax egg, sugar and vanilla until well mixed.
Add all dry ingredients to the bowl and mix until dough forms. Finally, stir in chocolate chips.
Scoop dough into 1-2tbsp sized balls and place on parchment lined baking sheet. Use the back of a spoon to flatten them a bit.
Bake for 8-10 minutes, or until just set but not burnt! They will continue to firm up as they cool.
Allow to cool for at least 20 mins, then enjoy! Dip in your favorite glass of nut milk or drizzle with some coconut butter for an added treat.
